Yoshimura Brewery is a sake brewery located in Uda City, Nara Prefecture, nestled within a historic town recognized for its well-preserved traditional buildings. As both the president and the brewmaster of the brewery, President Yoshimura is more passionate about the brewing process of sake than its sale. Blessed with a favorable climate and natural resources, Yoshimura Brewery crafts sake using meticulously chosen rice and natural yeast, infusing each bottle with a passion for sake. They offer a unique selection of sake, including the time-honored Chiyo no Matsu, the historic Kagirohi, and our distinctive pink sake crafted from ancient rice grains. Drawing inspiration from historical texts, they've recreated a sake that reflects the brewing techniques of eras when rice was a precious commodity. This painstakingly crafted sake, with a 95% rice polishing ratio, has gained a loyal following.
Mr. Yoshimura, the brewmaster, says with a big smile, “Brewing sake is my hobby.” His unique approach to sake-making, which goes beyond the realm of business, is filled with his passion for sake.
It is rare to find a sake brewery that maintains traditional methods and still uses a large boiler-style hearth today. It may look old-fashioned, but it is also cutting-edge.
