Other than the ingredients that Chef Kosaka personally handpicks, including fresh fish; Italian vegetables are sent from the most reliable contract farmers, and the beef used is of the highest grade. During selected months and seasons, game meat is also introduced in the menu, adding rich and interesting meat flavors to the dishes.
