Sushi Matsumoto is famous among international foodies for its Michelin Star reputation. Initially starting out as a single shop in the cosmopolitan district of Akasaka, the restaurant’s receiving of a Michelin Star in 2019 and 2020 led to a significant uptick in its popularity, resulting in a huge influx of visitors that prompted a rapid expansion throughout the country.

Today, Sushi Matsumoto has outlets all over Japan, particularly in the Kansai region, with a presence even in Fukuoka. And yet the spirit of the original remains strong in all of these offshoots: visitors can still expect to find the same dedication to quality, and an interplay of the traditional and the contemporary in the creation of its Edomae sushi.

Of course, staples of the Edomae school of sushi are ever-present, such as the restaurant’s clam soup, and fatty bluefin tuna nigiri sprinkled with coarse salt. But the restaurant has its own less conventional signatures, like a sea urchin rice bowl topped with the rare blackthroat seaperch (nodoguro).

Sushi Kobe Matsumoto also provides a quiet, serene space in which diners can enjoy their sushi away from the noise of the waterfront. Perched atop seats of Nara cypress, guests will find it the perfect place for a special occasion, a meal with a loved one, or just an opportunity to appreciate the chef's handiwork.
