A longstanding fishing hub known for its sustainable practices and traditional fishing techniques, Katsuura Port in Wakayama Prefecture ships tuna across Japan. Unlike in most places, however, here you can enjoy it fresh rather than frozen, and truly savor its deep, rich flavors. While restaurants serving the bounties of the sea abound in the area, those looking for a challenge can learn to cut and prepare tuna themselves — with a little bit of expert help.

In this experience, you'll cut through a whole tuna of roughly 10 kg and prepare several dishes like sashimi, chirashi sushi, deep-fried tuna back meat, and more, guided by a local host. You'll then enjoy your assortment of five to seven tuna dishes, with the possibility of shipping the leftover tuna to your next destination in Japan for a separate fee.

Class flow:
- Meet your host at the meeting point arranged in advance with your guide
- Arrive at the cooking venue with your host, who will show you the fresh tuna you’ll use to cook
- Introduction to tuna by your knowledgeable guide
- Wash your hands, put on a vinyl apron and gloves, and start cutting through the fresh tuna following a simple tutorial video alongside the guide
- Once the tuna is cut, prepare several tuna dishes
- Have lunch
