Only the Echizen crabs that pass a strict inspection earn the highest grade of Kiwami. In this activity, we make plates that will be used exclusively for Kiwami crab. The plates we make in this activity will be used later during the Echizen crab season. Restaurants will use them to serve Kiwami crab or people will use them to enjoy Kiwami crab at home. Aside from Kiwami, the large plates we make can also be used for other foods like regular Echizen crab or sashimi. Here are some restaurants that offer Echizen crab.
