Kawashima Sake Brewery bears a history dating back to 1865. Their sake is celebrated around the world for its distinct terroir. This brewery is located in the western part of Japan's largest lake, Lake Biwa, with the majestic Hira Mountains spreading out behind it.Since ancient times, people in this area have spent their lives living next to pristine spring waters they call shozu. "In the spring, we plant rice, and in the fall, we brew sake. The sake brewing process continues throughout the year and shows a real appreciation for nature. It's a special part of Japan." says the president. They feel a personal responsibility to protect the regional community that thrives on sake production and are not only working hard to make a brand of sake respected in Japan, but expanding into whisky so that they can spread sake culture around the world.
