AWOMB Karasuma Head Shop, famous for the main menu, Teori-zushi (Handwoven sushi). It was opened in 2014 in the renovated 80-year-old residence in Kyoto. Now they have three shops in Kyoto City.
Teori-zushi is made of fish and vegetables from Kyoto in season, mainly ingredients for side dishes. Koshihikari rice from Tanba, Kyoto and Chidori Vinegar from Murayama Zosu - everything is from Kyoto. They use no artificial seasoning and maximize the natural taste of ingredients.
Colorful ingredients are arranged on a plate. You simply pick what you like from the plate, add seasonings and rice, and wrap them up with seaweed. There are fruits as well - try adding them to your sushi.
